My great ally in healthy cooking is a nonstick frying pan. Since I started my diet I changed my cooking pans and my cooking gadgets because non stick is the best when it comes to frying things or cooking things you used to cook before
Because when you are cooking healthy , you try to modify the flavor to overcome the lack of salt and oil
Honestly I use a little of salt and instead of sodium chloride, I use potassium chloride which has the same flavor as salt but doesn't cause bloating and water retention
On my chicken that day I used around two tablespoon only olive oil ! which is a very healthy alternative to corn oil and it promotes heart health and contain lots of poly unsaturated fats that help reduce cholesterol and heart diseases
For my spices
I use a lot of spices and kinda experiment with flavor like coriander and cumin. Paprika and nutmeg are great and has subtle flavors. I use also lots of chili like peppers and garlic
On my fried chicken that day I used Cinnamon and saffron color with cardamom
My mother had this signature flavor for her fried chicken with rice which is Cinnamon
On the rice I used the boiling soup of the chicken after cooking the chicken first
For the tomato sauce I grate some garlic and fry it in one table spoon of olive oil then I add tomato paste and grate some fresh tomato as well and bring it to a boil and let it thicken after that I add some salt and freshly grounded black pepper and that should be it
All in all invest in some good quality non stick pans and you will see all the difference but remember to take a good care of them by not scratching them nor stirring with metal spoon
